Ingredients
2 cups
cooked long-grain brown rice
1 lb
uncooked deveined peeled medium shrimp
1 can
(2.25 oz.) sliced black olives, drained
1 tbsp
capers
1/3 cup
crumbled goat cheese
Instructions
Step 1
Heat oven to 350°F.
Step 2
Spoon rice into 2-qt. casserole sprayed with cooking spray.
Step 3
Combine all remaining ingredients except cheese; spoon over rice.
Step 4
Bake 20 min. or until shrimp are done and casserole is heated through. Top with cheese.
