    Tortillas

    Pork loin or plant-based substitute

  • 100

    Grated cheddar, mozzarella, or oaxaca cheese

  • 1/2

    Small pineapple

  • 1

    Small onion

  • 1

    Lime

    Chopped coriander

  • 1-2

    Olive oil


Instructions

  1. Step 1

    Chop your pork or plant-based substitute into strips and roughly dice a small onion. Mix with the Las Chicas Al Pastor cooking paste - leave to marinate for at least 30 minutes, (overnight is even better!). Chop some coriander, dice some pineapple, and set aside for later.

  2. Step 2

    Add 1-2 tbsp of oil to a pan and heat. Add the pineapple to the pork marinade and fry on medium-high heat for approximately 5 minutes, until the pork is cooked through.

  3. Step 3

    On your tortillas, place on a generous layer of cheese, then spoon on your cooked pork. Fold them in half, put in a baking tray brushed with olive oil, and place in a 180 degrees celsius oven. Bake for 8 minutes or until crispy and the cheese has melted. Flip halfway through.

  4. Step 4

    Chop the quesadilla into small triangles, serve with coriander, lime, and Las Chicas Salsa Roja. Enjoy!
