Gluten Free Broccoli Mac & Cheese with Crispy Parmesan Chickpeas

Ingredients
1 can
(15.5 oz.) chickpeas (garbanzo beans), rinsed
1 tsp
garlic powder
2 tbsp
olive oil, divided
⅓ cup
Parmesan cheese, grated
1 pkt
(14 oz.) KRAFT Deluxe Gluten Free Mac & Cheese
2 cups
small broccoli florets
1 cup
cherry tomatoes, quartered
Instructions
Step 1
Heat oven to 400°F.
Step 2
Sort chickpeas to pick out and discard any loose skins. Pat chickpeas dry with paper towels; place in medium bowl.
Step 3
Add garlic powder and 1 Tbsp. of the oil; mix lightly.
Step 4
Spread into single layer on parchment-covered rimmed baking sheet.
Step 5
Bake 25 min.
Step 6
Add Parmesan cheese to the chickpeas along with the remaining oil; stir. Bake an additional 15 to 20 min. or until chickpeas are deep golden brown in color and crisp in the centers, stirring occasionally.
Step 7
Meanwhile, cook Macaroni in large saucepan as directed on package, adding broccoli to the cooking water for the last 3 min.
Step 8
Drain macaroni mixture; return to saucepan. Add Cheese Sauce and tomatoes; mix lightly. Cook 2 to 3 min. or until heated through, stirring frequently.
Step 9
Serve topped with the chickpeas.
Serving Suggestion:
Serve with a mixed green salad tossed with your favorite KRAFT Dressing.
