Everything Bagel Salmon with Creamy Mashed Cauliflower and Asparagus

Ingredients

1 lb

fresh asparagus spears, trimmed

4 

skinless salmon fillets (1 lb.)

4-1/2 tsp

everything bagel seasoning

4 oz

(1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, divided

1 pkg

(12 oz.) frozen cauliflower florets

2 

green onions, sliced, divided

water


Instructions

Step 1

Heat oven to 400ºF.

Step 2

Bring 4 cups (1 qt.) water to boil in large saucepan.

Step 3

Meanwhile, toss asparagus with 1 Tbsp. dressing. Spread onto half of foil-covered rimmed baking sheet sprayed with cooking spray. Add fish to other side of baking sheet. Brush fish with 1 Tbsp. of the remaining dressing; sprinkle with everything bagel seasoning.

Step 4

Bake 15 to 17 min. or until asparagus is crisp-tender and fish flakes easily with fork. While asparagus is baking, add cauliflower to boiling water; cook 10 min. or until tender.

Step 5

Drain cauliflower; return to saucepan. Add 2 oz. cream cheese. Mash cauliflower until smooth and well blended with the cream cheese. Stir in half the onions.

Step 6

Cook remaining cream cheese and dressing with 3 Tbsp. water in medium saucepan over medium-low heat 3 to 4 min. or until cream cheese is completely melted and sauce is well blended, stirring constantly. Remove saucepan from heat. Stir in remaining onions.

Step 7

Serve fish, asparagus and mashed cauliflower topped with the cream cheese sauce.
