Ingredients

1/4 cup

pineapple juice

1 

canned chipotle pepper in adobo sauce, finely chopped

1 lb

(450 g) pork tenderloin, trimmed, cut into 1-1/2-inch pieces

1 cup

fresh pineapple chunks (1 inch)

fresh mushrooms

1 

poblano chile, cut into 1-inch pieces

1/2 

red onion, cut into 1-inch chunks


Instructions

Step 1

Heat barbecue to medium-high heat.

Step 2

Mix first 3 ingredients until blended.

Step 3

Thread remaining ingredients alternately onto 8 skewers.

Step 4

Grill skewers 12 to 15 min. or until meat is done (160ºF), turning and brushing occasionally with pineapple sauce mixture.
