Ingredients

2 

120g sachets Amoy chow mein stir fry sauce

1 tbsp

Vegetable oil

4 

Medium skinless chicken breasts, sliced

1 

Onion, sliced

1 

Large red pepper, sliced

2 

Cloves garlic, finely chopped

15 g

Root ginger, peeled and finely chopped

1/2-1 

Red chilli, deseeded and finely chopped

20 g

Fresh coriander, roughly chopped

Warm flour tortillas, to serve

Shredded crispy lettuce, to serve


Instructions

Step 1

Heat a wok over a high heat, add half the oil with the chicken and stir fry for 3-4 minutes until the chicken is golden and thoroughly cooked, remove

Step 2

Add the remaining oil to the wok and fry the onions and peppers for a minute before adding in the garlic, ginger and chilli and stir fry until softened

Step 3

Stir in the Amoy chow mein stir fry sauce and coriander, add the cooked chicken and heat through before seasoning with black pepper

Step 4

Serve immediately in the warmed tortillas with shredded lettuce
