Smashed peas on toast


Ingredients

    Medium avocado, peeled & stone remove

    Tin Golden Circle® green peas

  • 2

    Spring onions

  • 1

    cup

    Baby spinach leaves

  • 1/2

    cup

    Picked basil leaves

  • 1/2

    cup

    Picked mint leaves

    Juice of 1 lemon

    Salt, to taste

    Slices bread, toasted


Instructions

  1. Step 1

    Combine all the ingredients in a food processor. Pulse a few times to blend to a chunky puree. Spread over hot toast and serve with your favourite toppings.

  2. Step 2

    Serving suggestions: Serve with tomatoes and basil, soft boiled eggs and chilli or Persian feta, fresh herbs, dukkah and lemon juice.
