Ingredients

Peanut or vegetable oil

1/2 

Red onion, sliced

2 cm

Piece ginger, finely grated

2 

Cloves garlic, crushed

3 

Long red chillies

Chicken thighs, finely diced

100 g

Green beans

440 g

Golden Circle Australian pineapple pieces, in juice

2 tbsp

Oyster sauce

2 tbsp

Soy sauce

2 cups

Picked Thai basil leaves

Steamed jasmine rice, to serve


Instructions

Step 1

Heat oil in a wok over high heat. Add the onion, ginger, garlic and chillies. Stir-fry for 1 minute then add the chicken, cooking for another 2-3 minutes, or until golden.

Step 2

Add the green beans, Golden Circle Pineapple Pieces with 2 tablespoons of reserved pineapple juice. Add the oyster sauce and soy sauce. Stir-fry for 2 minutes, until the sauce coats the chicken evenly.

Step 3

Turn off the heat and stir in the Thai basil leaves. Serve with steamed rice.
