Ingredients

    boneless, skinless chicken breasts

  • 1/4

    tsp

    black pepper

  • 1/2

    tsp

    onion powder

  • 1/2

    tsp

    garlic powder

  • 1/4

    tsp

    smoked paprika

  • 4

    tbsps

    olive oil divided

  • For Filling:

  • 8

    oz

    Philadelphia Cream Cheese

  • 1/2

    cup

    freshly shredded Parmesan cheese

  • 1

    tsp

    onion powder

  • 1

    tsp

    garlic powder

  • 1/2

    tsp

    Paprika

  • 2

    cups

    spinach (chopped and cooked)

  • 1-2

    cloves of garlic chopped

  • Chives, for garnish


Instructions

  1. Step 1

    Preheat oven to 375 F.

  2. Step 2

    Combine pepper, onion powder, garlic powder, smoked paprika in small bowl.

  3. Step 3

    Drizzle olive oil over chicken breasts. Rub seasoning mix over chicken, making sure to cover completely and evenly.

  4. Step 4

    Combine all ingredients for filling in a bowl and set aside.

  5. Step 5

    Cut a pocket in each chicken breast, making sure not to cut all the way through.

  6. Step 6

    Stuff each chicken breast with filling.

  7. Step 7

    Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.

    Once heated, sear the stuffed chicken breasts on each side, but don’t cook through. You may need to do this in two batches depending on the size of your chicken breasts.

    Place all 6 breasts in the skillet and transfer the skillet to the oven. Bake for 25 to 35 minutes or until internal temp of chicken 165 F.
