Kiwi chicken and avocado mayo wraps

Ingredients

Ripe avocado

1/2 cup

Eta thick & creamy mayonnaise

1 

Cooked rotisserie chicken

Multigrain wraps

Shredded iceberg lettuce

3 cups

Grated carrot

1/2 

450g can Wattie's sliced beetroot, drained and cut into matchstick lengths

Red onion, finely diced

Instructions

Step 1

Mash the avocado flesh and mix into the Eta Thick & Creamy Mayonnaise.

Step 2

Remove the chicken meat from the cooked chicken, discarding the bones and skin, and shred the meat.

Step 3

Spread 1–2 Tbsp mayo and avocado mix over a multigrain wrap. Layer the lettuce, chicken, carrot, Wattie’s Sliced Beetroot and red onion down the centre of the wrap.

Step 4

Fold up the bottom of the wrap then fold one side over the filling and fold the other side over to enclose the filling. Repeat with remaining wraps and fillings.
