Breakfast Hash Brown Muffin Cups


Ingredients

    Wattie's® Classic Hash Browns

  • 1

    tin

    Wattie's® Beanz™ Baked Beans in Tomato Sauce 420g

  • 5

    slices

    Streaky bacon, chopped

  • 1

    cup

    Grated cheese

  • 25

    ml

    Milk

  • 5

    Eggs

  • 1 Tbsp

    Fresh parsley, chopped

    Salt and pepper


Instructions

  1. Step 1

    Preheat oven to 200°C (or 210°C if using oven in step 2). Spray a muffin tin with oil.

  2. Step 2

    Cook the Wattie's Classic Hash Browns in an air fryer at 180°C for 10-15 minutes or bake at 210°C for 15 minutes, turning halfway through.

  3. Step 3

    Cook or air fry bacon until crispy, then chop into small pieces.

  4. Step 4

    In a bowl, whisk together the eggs, milk, salt, and pepper.

  5. Step 5

    Once the hash browns are cooked, break them up and press a portion into the base of each muffin cup to form a crust.

  6. Step 6

    Spoon Wattie's Beanz Baked Beans in Tomato Sauce over each hash brown crust, add a layer of bacon, and pour in the egg mixture.

  7. Step 7

    Sprinkle with cheese and garnish with parsley, and season with black pepper.

  8. Step 8

    Bake for 15 minutes or until the egg is set and the cheese is melted.
