Ingredients

1 tin

Wattie's® Four Bean Mix in Springwater 400g, drained and rinsed well

3 large

Eggs

3 Tbsp 

Light extra virgin olive oil

1 tsp

Vanilla extract

2 tsp

Gregg’s® Powdered Instant Coffee Red Ribbon Roast (optional)

1/4 cup

Cocoa powder

2/3 cup

Caster sugar

1/2 tsp

Baking powder

1/4 tsp

Salt

1/2 cup

Choc chips of choice (optional)


Instructions

Step 1

Preheat oven to 175°C (fan forced).

Step 2

Blend the drained beans in a food processor or blender until it forms a smooth paste.

Step 3

Wet: In a large bowl, combine blended beans, eggs, oil, and vanilla extract.

Step 4

Dry: In a separate bowl, combine coffee, cocoa powder, sugar, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix well, then fold in chocolate chips.

Step 5

Line a brownie tin (20 x 20 x 3.5cm) or standard baking tray with baking paper and pour in batter. Top with additional chocolate chips, if desired. Bake for 30 minutes, or until the edges are visibly cooked and the centre doesn't jiggle- use a skewer to test if it comes out relatively clean. Bake for less time for a gooier brownie.

Step 6

Allow brownies to cool for 20 minutes before cutting. Enjoy!
