Peach and Vanilla Blender Cake with Flaked Almonds

Ingredients

Wattie's® Peaches Sliced in Clear Fruit Juice 410g

cup Self-raising flour

1 tsp

Baking soda

1/4 tsp

Table salt

150 g

Caster sugar

125 g

Butter, softened

2 large

Eggs

1/2 cup

Whole milk

2 tsp

Vanilla extract

1/2 cup

Flaked almond pieces

Clear fruit juice (from tin)

Reduced peach syrup from can

Instructions

Step 1

Drain the Wattie's Peaches, reserving the juice. Set the peaches aside.

Step 2

In a blender, combine the flour, baking soda, salt, sugar, butter, eggs, milk, and vanilla extract. Blend until smooth.

Step 3

Pour all of the batter into a greased baking dish. Arrange the peaches on top (or underneath) the batter, depending on preference. Sprinkle flaked almonds over the top.

Step 4

Prep reduced syrup. As the cake cooks, reduce the syrup in a pan over a medium heat until thick and saucy.

Step 5

Bake at 180°C for 35-40 minutes or until a skewer inserted into the centre comes out clean.

Cool: Allow to cool before slicing and serving. Pour over reserved syrup and add a dollop of Greek yoghurt to serve.
