Ingredients

1 tin

Wattie's® Chickpeas in Springwater 400g, drained and rinsed

1 tin

Wattie's® Black Beans in Springwater 400g, drained and rinsed

1 tin

Wattie's® Red Kidney Beans in Springwater 400g, drained and rinsed

1 cup

chopped deli meats (like salami and ham)

125 g

cherry bocconcini

1 

small red onion, finely diced

300 g

cherry tomatoes, chopped

1/2 

cucumber, chopped

1 tin

Wattie's® Beetroot Chunky 450g

 

Handful of chopped fresh parsley

 

Lemon dressing:

1/3 cup

olive oil

1/4 cup

lemon juice

1 tsp

Dijon mustard

1/2 tsp

honey

 

Salt and pepper


Instructions

Step 1

Combine Wattie’s Chickpeas, Wattie’s Kidney Beans, Wattie’s Black Beans, deli meats, cherry Bocconcini, red onion, cherry tomatoes and cucumber in a large salad bowl.

Step 2

Mix all the dressing ingredients in a jar and mix to combine. If you have a jar with a lid, add all the ingredients, tighten the lid and shake well.

Step 3

Drizzle the dressing over the salad and toss well to combine.

Step 4

Sprinkle over pieces of Wattie’s Chunky Beetroot and chopped fresh parsley.
