Ingredients

1 cup

Cashews

1 tin

Wattie's® Four Bean Mix in Springwater 400g

1 

Ripe banana

1/2 cup

Maple syrup

1 tsp

Vanilla extract

1 tsp

Cinnamon

80 g

Peanut butter

2 cups

Oats

50 g

Sultanas

50 g

Pumpkin seeds

75 g

Greek yoghurt

1 tsp

Icing sugar

Zest of 1 lemon


Instructions

Step 1

Preheat oven to 180°C.

Step 2

Add cashews to a food processor and blend until chunky pieces form. Remove from food processor and set aside.

Step 3

Add the drained Wattie’s Four Beans Mix, banana, maple syrup, vanilla extract, cinnamon and peanut butter to the food processor. Blend until smooth.

Step 4

Add oats to the mixture and process briefly until everything is just combined.

Step 5

Transfer the mixture to a bowl and add cashew chunks, sultanas and pumpkin seeds. Fold through with a spatula.

Step 6

Pour the mixture into a prepared baking tray and spread it evenly into a thin layer.

Step 7

Bake for about 30-40 minutes, or until the top is lightly browned.

Step 8

Let the bars cool in the baking tray before removing. Once cooled, cut into bars or squares.

Step 9

In separate bowl, combine Greek yogurt with icing sugar and mix until well combined. Spread a thin, even layer of Greek yogurt mixture over the top of the bars, then garnish with lemon zest.

Step 10

Refrigerate bars in sealed containers. Enjoy!
