These homemade breakfast muffins are the perfect grab-and-go. Packed with cranberries and cereal, these muffins will start your day off right.


Ingredients

  • 1

    egg

  • 1

    cup

    skim milk

  • 1/3

    cup

    non-hydrogenated margarine, melted

  • 3

    cups

    honeycomb-shaped sweetened corn and oat cereal

  • 1/4

    cup

    dried cranberries

  • 1

    cup

    flour

  • 2

    tbsp

    sugar

  • 1

    tbsp

    Magic Baking Powder


Instructions

  1. Step 1

    Preheat oven to 400°F. Beat egg, milk and margarine in medium bowl with wire whisk until well blended. Stir in cereal; let stand 3 min or until cereal is softened. Meanwhile, toss cranberries with flour, sugar and baking powder. Add cereal mixture; stir just until moistened. (Batter will be lumpy.)

  2. Step 2

    Spoon evenly into 12 greased muffin cups, filling each cup two-thirds full.

  3. Step 3

    Bake 20 min. or until wooden toothpick inserted in centres comes out clean. Cool in pan 5 min. Remove to wire rack; cool completely.
