You won't be able to resist our Wholewheat Pancakes with Berry Sauce. The perfect choice to serve as part of a leisurely weekend breakfast.


Ingredients

    cup

    whole wheat flour

  • 1/4

    cup

    sugar, divided

  • 1

    tbsp

    Magic Baking Powder

  • 1/2

    tsp

    salt

  • 1

    egg

  • 1

    cup

    1% milk

  • 1

    tsp

    vanilla

  • 2

    tbsp

    canola oil, divided

  • 3/4

    cup

    frozen blueberries

  • 3/4

    cup

    frozen raspberries

  • 1/2

    tsp

    cornstarch


Instructions

  1. Step 1

    Combine flour, 2 Tbsp. sugar, baking powder and salt.

  2. Step 2

    Whisk egg, milk, vanilla and 1 Tbsp. oil in medium bowl until blended. Stir in flour mixture.

  3. Step 3

    Ladle batter onto hot griddle or into hot skillet brushed with some of the remaining oil, using 2 Tbsp. batter for each pancake and brushing griddle or skillet with remaining oil between batches as needed. Cook until bubbles form on tops, then turn to brown other sides.

  4. Step 4

    Toss berries with remaining sugar and cornstarch in medium microwaveable bowl. Microwave on HIGH 1 min.; stir. Microwave additional 1-1/2 to 2 min. or until slightly thickened.

  5. Step 5

    Serve pancakes topped with berry sauce.
